Include your trout (your fishmonger will do this - unless you are in the woods), season with salt and pepper and stuff a slice or two of lemon into the cavity. Take 3 or 4 sheet magazines (if you want the Wall Street Journal to make it a big fish!) And rub the fish, dip the parcel in the water so that it is completely soaked and place it on the grill in place.

Add some heat to it so that the bird's eye pepper is there too. The chilies are small but that doesn't mean they are light (so far) so feel free to minimize the number of chilies if this is not your thing.

4 trout (gut and washed)
1 tablespoon mustard seed
250ml / 9fl oz extra virgin olive oil

At the outset, here is a mixture of ingredients
1 teaspoon cumin  
As teaspoon black pepper
1 teaspoon chili powder
1 teaspoon hot spice
1 teaspoon cooking oil
2 teaspoons lemon juice
A pinch of salt


Mix all the ingredients to create your rub.
